Ingredients

  • 3 pounds corned beef brisket with spice packet
  • 6 cups water
  • 3 pieces garlic cloves, minced
  • 1 large yellow onion, quartered
  • 2 pieces bay leaves
  • 1 teaspoon black peppercorns
  • 8 pieces small red potatoes, halved
  • 4 pieces carrots, peeled and cut into chunks
  • 1 head green cabbage, cut into wedges
  • 2 tablespoons unsalted butter (optional, for serving)
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Remove the corned beef brisket from its packaging and rinse it under cold water to remove excess brine.

Step 2

Place the corned beef brisket into a large Dutch oven or stockpot. Add the spice packet, water, minced garlic, onion, bay leaves, and black peppercorns.

Step 3

Bring the mixture to a boil over medium-high heat, then reduce the heat to low. Cover the pot and simmer for 3 hours, or until the brisket is tender.

Step 4

After 3 hours, add the red potatoes and carrots to the pot. Cover and simmer for an additional 30 minutes.

Step 5

Add the cabbage wedges to the pot and simmer for another 30 minutes, or until the cabbage is tender but still holds its shape.

Step 6

Carefully remove the corned beef brisket from the pot and let it rest for 10 minutes on a cutting board. Slice it against the grain into thin slices.

Step 7

Using a slotted spoon, remove the vegetables from the pot and transfer them to a serving platter.

Step 8

Optional: Drizzle the vegetables with melted butter and sprinkle with fresh parsley for added flavor and presentation.

Step 9

Serve the sliced corned beef alongside the vegetables and enjoy your hearty meal!
