Ingredients

  • 6 medium Russet potatoes
  • 2 cups Ham
  • 1 medium Yellow onion
  • 2 medium Carrots
  • 2 Celery stalks
  • 3 Garlic cloves
  • 6 cups Chicken broth
  • 4 tablespoons Butter
  • 0.25 cup All-purpose flour
  • 2 cups Milk
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Peel the potatoes and cut them into 1/2-inch cubes. Dice the ham, onion, carrots, and celery. Mince the garlic cloves.

Step 2

In a large pot over medium heat, add 2 tablespoons of butter. Once melted, sauté the diced onions, carrots, and celery until softened, about 5 minutes.

Step 3

Add the minced garlic and cook for another minute, stirring frequently to avoid burning.

Step 4

Add the cubed potatoes, ham, and chicken broth to the pot. Bring the soup to a boil, then reduce the heat and let it simmer for about 15-20 minutes, or until the potatoes are tender.

Step 5

In a separate saucepan, melt the remaining 2 tablespoons of butter over medium heat. Stir in the all-purpose flour and cook for 1-2 minutes, whisking constantly, to create a roux.

Step 6

Slowly pour the milk into the roux, whisking constantly until the mixture thickens and becomes smooth, about 3-5 minutes.

Step 7

Pour the thickened milk mixture into the pot with the soup and stir well to combine. Simmer for an additional 5 minutes to allow the flavors to meld together.

Step 8

Season the soup with salt and black pepper to taste.

Step 9

Serve the soup hot, optionally garnished with fresh parsley. Pair with warm bread or crackers for a complete meal.
