In a medium-sized pot, bring 3 cups of water to a boil over medium heat. If using salt, stir it into the water at this point.
In a separate bowl, mix 1 cup of maize meal with the remaining 1 cup of cold water to create a smooth slurry. This prevents lumps from forming when added to the hot water.
Gradually pour the maize meal slurry into the boiling water while stirring continuously with a wooden spoon or whisk.
