Ingredients

  • 120 grams all-purpose flour
  • 500 milliliters whole milk
  • 4 pieces large eggs
  • 50 grams granulated sugar
  • 50 grams unsalted butter
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 15 grams powdered sugar (optional, for garnish)
  • 150 grams fresh berries or fruit (optional, for serving)
  • 60 milliliters maple syrup or jam (optional, for serving)

Directions

Step 1

Preheat your oven to 220°C (428°F) and place a 9x13-inch (23x33 cm) baking dish inside to heat while you prepare the batter.

Step 2

In a medium bowl, whisk together the all-purpose flour, granulated sugar, and salt to combine the dry ingredients.

Step 3

In a large mixing bowl, whisk the eggs until frothy. Gradually add the milk and vanilla extract to the eggs, whisking continuously.

Step 4

Gradually sift in the dry ingredients into the wet ingredients, whisking to create a smooth, lump-free batter. The batter will be thin—this is normal.

Step 5

Carefully remove the preheated baking dish from the oven and immediately add the unsalted butter. Let it melt and swirl it around to coat the bottom and sides of the dish evenly.

Step 6

Pour the batter into the hot baking dish over the melted butter. Quickly place it back in the oven to bake.

Step 7

Bake for 25-30 minutes, or until the Pannukakku is golden brown and puffed up, with slightly crispy edges. Do not open the oven door while baking, as the pancake may deflate.

Step 8

Once baked, remove the dish from the oven and let the Pannukakku cool for 5 minutes. It will deflate slightly—this is normal.

Step 9

Cut into squares or slices, dust with powdered sugar if desired, and serve warm with fresh berries, fruit, maple syrup, or jam.
