Ingredients

  • 500 ml Heavy cream
  • 125 ml Whole milk
  • 75 g Granulated sugar
  • 1 tsp Vanilla extract
  • 2.5 tsp Powdered gelatin
  • 3 tbsp Cold water
  • 250 g Fresh strawberries
  • 100 g Dark chocolate
  • 100 ml Heavy cream (for sauce)
  • 1 tsp Fresh orange zest
  • 2 tbsp Fresh orange juice

Directions

Step 1

In a small bowl, sprinkle the powdered gelatin over the cold water and let it bloom for 5-10 minutes.

Step 2

In a saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring occasionally, until the sugar dissolves and small bubbles form around the edges of the pot. Do not let it boil.

Step 3

Remove the saucepan from the heat and stir in the vanilla extract.

Step 4

Whisk the bloomed gelatin into the warm cream mixture until fully dissolved and smooth. Strain the mixture through a fine mesh sieve to ensure a silky texture.

Divide the mixture evenly between six ramekins or serving glasses. Let them cool to room temperature, then cover with plastic wrap and refrigerate for at least 4 hours or until fully set.

While the panna cotta is chilling, prepare the chocolate orange sauce. In a small saucepan, heat the heavy cream over low heat until warm but not boiling.
