Ingredients

  • 4 pieces Salmon fillets (skinless)
  • 1 cup Panko breadcrumbs
  • 0.25 cup Parmesan cheese (grated)
  • 2 tablespoons Fresh parsley (chopped)
  • 2 cloves Garlic (minced)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 3 tablespoons Olive oil
  • 4 pieces Lemon wedges (for serving)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, combine the panko breadcrumbs, grated Parmesan cheese, chopped parsley, minced garlic, salt, and black pepper. Stir well to mix evenly.

Step 3

Add 2 tablespoons of olive oil to the breadcrumb mixture and mix until the crumbs are evenly coated and slightly moist.

Step 4

Place the salmon fillets on the prepared baking sheet, ensuring they are spaced evenly apart.

Step 5

In a small bowl, whisk together Dijon mustard and lemon juice. Brush this mixture evenly over the top of each salmon fillet.

Step 6

Using a spoon or your hands, press the panko mixture onto the top of each salmon fillet, creating a thick, even crust.

Step 7

Drizzle the remaining 1 tablespoon of olive oil over the breadcrumb topping to help it crisp up in the oven.

Step 8

Bake the salmon in the preheated oven for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork. The crust should be golden brown.

Step 9

Remove the salmon from the oven and let it rest for 2-3 minutes.

Step 10

Serve the panko-crusted salmon with lemon wedges on the side for a squeeze of fresh citrus.
