Ingredients

  • 1 pound Halibut cheeks
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 0.5 cup All-purpose flour
  • 2 large Eggs
  • 2 tablespoons Water
  • 1.5 cups Panko breadcrumbs
  • 0.5 teaspoon Paprika
  • 2 cups Vegetable oil (for frying)
  • 1 whole Fresh lemon wedges

Directions

Step 1

Pat the halibut cheeks dry with paper towels and season them evenly with salt, black pepper, and garlic powder. Set aside.

Step 2

Set up a dredging station with three shallow bowls or plates. In the first, add the flour. In the second, whisk together the eggs and water. In the third, combine the panko breadcrumbs and paprika.

Step 3

Working one piece at a time, dredge each halibut cheek in the flour, shaking off any excess. Then dip it into the egg mixture, letting the excess drip off. Finally, coat it thoroughly in the panko mixture, pressing gently to adhere the breadcrumbs.

Step 4

Pour the vegetable oil into a deep skillet or pot and heat it to 350°F (175°C) over medium-high heat. Use a kitchen thermometer to ensure the correct temperature.

Step 5

Once the oil is hot, carefully fry the halibut cheeks in batches, 2-3 minutes on each side, until they are golden brown and cooked through. Avoid overcrowding the pan to maintain the oil temperature.

Step 6

Transfer the fried halibut cheeks to a plate lined with paper towels to drain any excess oil.

Step 7

Serve immediately with fresh lemon wedges on the side for squeezing over the crispy halibut cheeks.
