Ingredients

  • 2 tablespoons Olive oil
  • 1 tablespoon Butter
  • 8 ounces Cremini mushrooms
  • 2 cloves Garlic
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 teaspoon Fresh thyme leaves
  • 4 slices Sourdough bread
  • 4 ounces Gruyère cheese
  • 2 teaspoons Dijon mustard
  • 1 cup Arugula

Directions

Step 1

Heat a skillet over medium heat and add the olive oil and butter.

Step 2

Clean and slice the cremini mushrooms thinly before adding them to the skillet. Sauté for 6-8 minutes, stirring occasionally, until softened and golden brown.

Step 3

Mince the garlic and add it to the skillet along with salt, black pepper, and thyme. Cook for an additional 1-2 minutes until fragrant. Remove the skillet from heat and set aside.

Step 4

Lay out the slices of sourdough bread. Spread a thin layer of Dijon mustard on one side of each slice.

Step 5

On two of the bread slices, layer the sautéed mushrooms, Gruyère cheese, and a handful of arugula. Top with the remaining bread slices, mustard side down.

Step 6

Preheat a stovetop grill pan or panini press over medium heat. If using a stovetop grill pan, lightly grease it with olive oil.

Step 7

Place the sandwiches on the grill pan or in the press. If using a grill pan, press down on each sandwich with a heavy skillet to mimic a panini press. Cook for 2-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

Step 8

Remove from heat, slice each panini in half, and serve warm.
