  • 2 slices Rustic bread (such as sourdough or ciabatta)
  • 2 slices Sharp cheddar cheese
  • 2 slices Thick-cut bacon
  • 1 Large egg
  • 2 teaspoons Unsalted butter
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Mayonnaise
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat a skillet over medium heat.

Step 2

Cook the bacon in the skillet until crispy, about 4-5 minutes, flipping halfway through. Transfer the cooked bacon to a plate lined with paper towels to drain excess grease.

In the same skillet, melt 1 teaspoon of butter over low heat. Crack the egg into the skillet and cook until the whites are set but the yolk remains runny, about 2-3 minutes. Sprinkle with a pinch of salt and pepper, then carefully remove the egg and set aside.

Spread the remaining 1 teaspoon of butter on one side of each bread slice.
