  • 24 pieces puri (store-bought or homemade)
  • 2 medium boiled potatoes
  • 0.5 cup black chickpeas (kala chana), soaked and boiled
  • 0.25 cup coriander leaves, finely chopped
  • 1 cup mint leaves
  • 2 tablespoons tamarind pulp
  • 1 teaspoon cumin powder
  • 1 teaspoon chaat masala
  • 0.5 teaspoon black salt
  • 2 pieces green chilies
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 4 cups cold water

Directions

Step 1

Begin by preparing the spicy tangy water, also known as 'pani'. In a blender, combine mint leaves, coriander leaves, green chilies, tamarind pulp, cumin powder, chaat masala, black salt, and regular salt. Blend these ingredients until you get a smooth paste.

Step 2

Transfer the mint-coriander paste to a large bowl. Add 4 cups of cold water and mix thoroughly. Adjust seasoning if necessary, adding more salt or chaat masala if required. Add lemon juice for an extra tang. Chill in the refrigerator until serving.

Step 3

For the stuffing, peel the boiled potatoes and mash them in a separate bowl. Add the boiled black chickpeas and chopped coriander leaves to the mashed potatoes. Mix well.

To stuff the puris, gently crack open the top of each puri to create a small hole. Carefully stuff each puri with a small spoonful of the potato-chickpea mixture.
