Ingredients

  • 150 grams stale bread
  • 4 tablespoons olive oil
  • 2 cloves garlic
  • 2 tablespoons fresh parsley
  • 1 teaspoon lemon zest
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.5 teaspoon red pepper flakes (optional)

Directions

Step 1

Start by tearing the stale bread into small pieces or cubes. Place the pieces into a food processor and pulse until you achieve a coarse bread crumb texture.

Step 2

Heat the olive oil in a large frying pan over medium heat.

Step 3

Peel and finely chop the garlic cloves.

Step 4

Add the chopped garlic to the heated olive oil and sauté for about 1 minute, until fragrant but not browned.

Step 5

Add the breadcrumbs to the pan, stirring well to ensure they are evenly coated with the oil.

Step 6

Continue to cook, stirring occasionally, for about 5-7 minutes, or until the breadcrumbs are golden brown and crispy.

Step 7

Remove the pan from heat and allow the breadcrumbs to cool slightly.

Step 8

Finely chop the fresh parsley and add it to the cooled breadcrumbs.

Step 9

Stir in the lemon zest, salt, ground black pepper, and red pepper flakes if using. Mix well to combine all the flavors.

Step 10

Transfer the pangrattato to a bowl and let it cool completely before using.

Step 11

Use immediately or store in an airtight container for up to 3 days.
