Ingredients

  • 1.5 pounds baby potatoes
  • 2 teaspoons salt
  • 3 tablespoons olive oil
  • 3 garlic cloves, minced

  • 0.5 teaspoons black pepper
  • 0.25 teaspoons chili flakes (optional)
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Wash the baby potatoes thoroughly and place them in a large pot. Fill the pot with water, covering the potatoes by at least an inch. Add 1 teaspoon of salt and bring to a boil over medium-high heat.

Step 2

Cook the potatoes for 15-20 minutes or until they are fork-tender. Drain the potatoes and let them rest for 5 minutes to cool slightly.

Step 3

Place the potatoes on a clean countertop or baking sheet. Using a potato masher or the bottom of a cup, gently press down on each potato to flatten it to about 1/2-inch thickness, being careful to keep them intact.
