Ingredients

  • 2 pieces Salmon fillets
  • 3 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 5 cloves Garlic cloves
  • 4 medium Yellow potatoes
  • 0.5 cups Heavy cream
  • 200 grams Green beans
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Lemon juice
  • 1 tablespoon Parsley (optional, chopped)

Directions

Step 1

Peel and cut the potatoes into evenly-sized chunks. Place them in a large pot of salted water, bring to a boil, and cook for 15-20 minutes until fork-tender.

Step 2

While the potatoes are boiling, wash and trim the green beans. Set them aside.

Step 3

Pat the salmon fillets dry with paper towels. Season both sides with salt and black pepper.

Step 4

In a large skillet over medium-high heat, add 2 tablespoons of olive oil. Place the salmon fillets skin-side down in the pan and cook for 4-5 minutes until the skin is crisp. Flip the salmon and cook for another 3 minutes until the fish is cooked through. Remove from the pan and keep warm.

For the garlic mash: Drain the cooked potatoes and return them to the pot. Add 3 minced garlic cloves, 1 tablespoon of butter, and the heavy cream. Mash until smooth and creamy. Season with salt and more butter if desired.

For the green beans: In a separate skillet, heat 1 tablespoon of olive oil over medium heat. Add the green beans, season with a pinch of salt, and sauté for 5-6 minutes until tender-crisp.

Serve the salmon fillets alongside a generous scoop of garlic mashed potatoes and green beans. Garnish with chopped parsley if desired.
