Ingredients

  • 3 cups All-purpose flour
  • 1 cup Granulated sugar
  • 0.5 cup Brown sugar
  • 1 tbsp Baking powder
  • 0.5 tsp Salt
  • 2 tsp Ground cinnamon
  • 0.5 cup Unsalted butter
  • 2 count Large eggs
  • 1 cup Whole milk
  • 1 tsp Vanilla extract
  • 1.5 cups Apples, peeled and diced
  • 0.5 cup Raisins
  • 0.75 cup Powdered sugar
  • 2 tbsp Heavy cream
  • 0.25 tsp Additional ground cinnamon (for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a standard 12-cup muffin tin with paper liners or grease the tin well.

Step 2

In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, salt, and ground cinnamon.

Step 3

Melt the butter and let it cool slightly. In a medium bowl, whisk together the melted butter, eggs, milk, and vanilla extract.

Step 4

Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix; the batter will be lumpy but uniform.

Step 5

Fold the diced apples and raisins into the batter using a spatula.

Step 6

Spoon the batter evenly into the prepared muffin tin, filling each cup nearly to the top.

Step 7

Bake in the preheated oven for 22-25 minutes, or until the tops are golden brown and a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and allow them to rest in the tin for 5 minutes before transferring to a wire rack to cool completely.

Step 9

In a small bowl, whisk together the powdered sugar and heavy cream to make a thick glaze. Drizzle the glaze over the cooled muffins.

Step 10

Lightly sprinkle additional ground cinnamon on top of the glazed muffins for garnish, if desired.

Step 11

Serve and enjoy these sweet and spiced cobblestone muffins with your favorite hot beverage!
