Ingredients

  • 4 slices Ciabatta bread
  • 8 ounces Cooked turkey breast
  • 1 cup Artichoke hearts, chopped
  • 0.25 cup Mayonnaise
  • 2 tablespoons Grated Parmesan cheese
  • 1 cup Fresh spinach leaves
  • 0.5 cup Roasted red bell peppers, sliced
  • 4 slices Provolone cheese
  • 2 tablespoons Olive oil or butter

Directions

Step 1

Prepare the artichoke spread by combining the chopped artichoke hearts, mayonnaise, and grated Parmesan cheese in a small bowl. Mix well and set aside.

Step 2

Spread a thin layer of the artichoke mixture on one side of each ciabatta slice.

Step 3

Layer 4 ounces of turkey breast, 1/2 cup of fresh spinach leaves, 1/4 cup of roasted red bell peppers, and 2 slices of provolone cheese on one slice of bread for each sandwich.

Step 4

Top with the second slice of ciabatta, artichoke spread facing down, to complete the sandwich.

Step 5

Brush the outside of each sandwich with olive oil or butter for a golden, crispy crust.

Step 6

Preheat a panini press, grill pan, or skillet over medium heat.

Step 7

Place the sandwiches on the hot surface and press gently. Cook for 3-5 minutes on each side, or until the bread is toasted and the cheese is melted. If using a skillet, place a heavy item like a second pan to press down the sandwich.

Step 8

Remove the panini from the heat and allow to cool for a minute before slicing in half.

Step 9

Serve warm and enjoy your Turkey Artichoke Panini!
