Ingredients

  • 1 pound Sirloin steak
  • 6 cups Mixed greens
  • 1 cup Grape tomatoes
  • 1 medium Red onion
  • 0.5 cup Apple cider vinegar
  • 2 tablespoons Sugar
  • 0.5 cup Gorgonzola cheese crumbles
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Horseradish
  • 0.25 cup Mayonnaise
  • 2 tablespoons Sour cream
  • 1 tablespoon Lemon juice

Directions

Step 1

Begin by preparing the pickled onions. Thinly slice the red onion and place it in a small bowl. In a separate small saucepan, heat the apple cider vinegar and sugar over medium heat until the sugar dissolves. Pour the hot mixture over the onions and set aside to pickle while preparing the rest of the salad.

Step 2

Season the sirloin steak with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper. Heat a skillet over medium-high heat and add 1 tablespoon of olive oil.

Step 3

Sear the steak for 3-4 minutes per side, or until it reaches your desired level of doneness. Remove the steak from the skillet and let it rest for 5-7 minutes before slicing thinly against the grain.

Step 4

To make the horseradish dressing, whisk together the horseradish, mayonnaise, sour cream, lemon juice, and a pinch of salt and pepper in a small bowl. Taste and adjust seasoning as needed.

Step 5

Build the salad by arranging the mixed greens on a serving platter or individual plates. Scatter the grape tomatoes and pickled onions (drained) over the greens.

Step 6

Top the salad with the sliced steak and sprinkle the gorgonzola cheese crumbles over everything.

Step 7

Drizzle the salad with the prepared horseradish dressing, and finish with a final sprinkle of salt and pepper if desired. Serve immediately and enjoy!
