Ingredients

  • 250 grams Paneer (Indian cottage cheese)
  • 4 stalks Scallions (green onions), finely chopped
  • 2 medium Tomatoes, finely chopped
  • 1 unit Green chili, finely chopped
  • 1 teaspoon Ginger, finely grated
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 0.5 teaspoon Garam masala
  • 0.5 teaspoon Cumin seeds
  • 0.75 teaspoons Salt
  • 1 tablespoon Oil or ghee
  • 2 tablespoons Fresh cilantro, finely chopped

Directions

Step 1

Crumble the paneer into small, bite-sized pieces and set it aside.

Step 2

Heat a large skillet or frying pan over medium heat and add the oil or ghee.

Step 3

Once the oil is hot, add the cumin seeds and let them sizzle for 10-15 seconds until aromatic.

Step 4

Add the finely chopped scallions (white part only) and sauté for 2 minutes until soft.

Step 5

Stir in the grated ginger and chopped green chili. Cook for another 30 seconds to release the flavors.

Step 6

Add the chopped tomatoes, turmeric powder, red chili powder, and salt. Cook for 3-4 minutes until the tomatoes turn soft and mushy.

Step 7

Lower the heat and add the crumbled paneer to the pan. Mix gently to combine and ensure the paneer is evenly coated with the spices and tomato mixture.

Step 8

Sprinkle the garam masala and stir everything together. Allow it to cook for another 2 minutes so the flavors meld.

Step 9

Turn off the heat and stir in the green parts of the scallions and half of the chopped cilantro.

Step 10

Garnish with the remaining cilantro before serving. Serve hot with roti, paratha, or steamed rice.
