  • 1 cup Cherry tomatoes
  • 0.5 cup Frozen peas
  • 3 cloves Garlic
  • 2 tablespoons Olive oil
  • 1 teaspoon Turmeric
  • 1 teaspoon Cumin powder
  • 0.5 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Cilantro
  • 1 tablespoon Lemon juice

Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.

Step 2

Peel and dice the carrot. Dice the bell pepper and zucchini. Halve the cherry tomatoes. Mince the garlic. Set all vegetables aside.

Step 3

Turn on your rice cooker to the 'Cook' setting and heat the olive oil inside the bowl for 1-2 minutes.

Step 4

Add the minced garlic to the rice cooker and sauté for 1 minute until fragrant.

Step 5

Add the carrot, bell pepper, zucchini, and cherry tomatoes. Stir and cook for 2-3 minutes.

Step 6

Stir in the turmeric, cumin powder, paprika, salt, and black pepper to coat the vegetables with spices.

Step 7

Add the rinsed rice to the rice cooker along with the vegetable broth and frozen peas. Stir gently to combine everything evenly.

Step 8

Close the lid of the rice cooker and select the 'Rice' or 'Cook' setting based on your rice cooker's options.

Step 9

Once the cooking cycle is complete, let the rice cooker switch to the 'Keep Warm' mode and leave it for an additional 5 minutes to allow flavors to meld.

Step 10

Open the lid and fluff the rice with a fork. Stir in the chopped cilantro and squeeze the lemon juice over the dish for a burst of freshness.

Step 11

Serve warm as a standalone meal or as a side dish. Enjoy!
