Ingredients

  • 8 oz chow mein noodles
  • 2 tbsp vegetable oil
  • 2 cups cabbage
  • 3 sliced celery stalks
  • 1 julienned carrot
  • 1 small onion
  • 3 chopped green onions
  • 1 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tsp hoisin sauce
  • 2 cloves garlic
  • 1 tsp ginger
  • 1 tsp sesame oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Begin by bringing a large pot of water to a boil. Add the chow mein noodles and cook them according to package instructions, usually around 5 minutes, until just al dente. Drain and rinse with cold water to stop the cooking process. Set aside.

Step 2

While the noodles cook, prepare the vegetable medley by thinly slicing the cabbage, celery, and onion. Julienne the carrot into thin strips and chop the green onions, setting them aside separately as they will be added last.

Step 3

In a small bowl, mix together the soy sauce, oyster sauce, hoisin sauce, minced garlic, and grated ginger to create the sauce for the chow mein. Set this aside.

Step 4

Heat the vegetable oil in a large skillet or wok over medium-high heat. Once the oil is hot and shimmering, add the onions, celery, and carrot. Stir-fry for about 3-4 minutes until the vegetables start to soften.

Step 5

Add the cabbage to the skillet and continue to stir-fry for another 2 minutes until the cabbage wilts slightly.

Step 6

Raise the heat to high and add the cooked noodles to the skillet, stirring well to combine with the vegetables.

Step 7

Pour the prepared sauce over the noodles and toss everything together to coat evenly. Stir-fry for another 2-3 minutes as the sauce thickens and flavors meld.

Step 8

Finally, drizzle with sesame oil, sprinkle with salt and pepper, add the green onions, and toss everything together for the final minute.

Step 9

Remove from heat and serve immediately, enjoying your homemade Panda Express-style chow mein as a delicious side or main dish.
