  • 400 grams spaghetti
  • 150 grams pancetta, diced

  • 1 large whole egg
  • 100 grams Parmesan cheese, grated

  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper, freshly ground
  • 2 tablespoons parsley, chopped (optional garnish)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the spaghetti according to the package instructions until al dente. Reserve 1 cup of pasta water before draining the spaghetti.

Step 2

In a small mixing bowl, whisk together the egg yolks, whole egg, and grated Parmesan cheese. Set aside.

Heat the olive oil in a large skillet over medium heat. Add the diced pancetta and spiced ham, cooking until the meats are golden and crisp, about 5-7 minutes.
