Ingredients

  • 4 large Russet potatoes
  • 100 grams Pancetta
  • 75 grams Parmesan cheese
  • 1 cup Breadcrumbs
  • 2 large Eggs
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Vegetable oil

Directions

Step 1

Peel and dice the russet potatoes into evenly sized chunks. Place them in a large pot, cover with water, and boil over medium-high heat until fork-tender, about 15 minutes.

Step 2

While the potatoes are cooking, finely dice the pancetta and cook it in a nonstick skillet over medium heat until crispy. Set aside on a paper towel to drain any excess fat.

Step 3

Drain the cooked potatoes and mash them in a large mixing bowl. Add the crispy pancetta, grated Parmesan cheese, salt, and black pepper. Mix until well combined. Let the mixture cool for 10 minutes.
