Ingredients

  • 2 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 1 teaspoon Granulated sugar
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter (cold, cubed)
  • 0.75 cup Whole milk
  • 4 ounces Pancetta (diced)
  • 2 tablespoons Fresh chives (chopped, optional)

Directions

Step 1

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

Step 2

In a small skillet over medium heat, cook the diced pancetta until crispy, about 5-7 minutes. Remove the pancetta with a slotted spoon and drain on a paper towel. Set aside to cool.

Step 3

In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt.

Step 4

Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

Step 5

Stir the cooled pancetta and chopped chives (if using) into the flour-butter mixture.

Step 6

Pour the milk into the mixture and gently stir with a wooden spoon until the dough just comes together. Avoid overmixing.

Step 7

Turn the dough out onto a lightly floured surface and gently knead it 3-4 times to bring it together. Pat the dough into a 1-inch thick rectangle.

Step 8

Use a biscuit cutter to cut out rounds or a knife to cut square biscuits. Gently reshape and pat out the dough scraps to cut more biscuits.

Step 9

Place the biscuits on the prepared baking sheet, leaving about 1 inch of space between each.

Step 10

Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown.

Step 11

Remove the biscuits from the oven and let them cool for a few minutes before serving. Enjoy warm!
