Ingredients

  • 500 grams Beets
  • 250 grams Plain yogurt
  • 2 cloves Garlic
  • 2 tablespoons Olive oil
  • 1 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 10 grams Fresh dill
  • 30 grams Walnuts (optional, for garnish)

Directions

Step 1

Wash the beets thoroughly to remove any dirt. Do not remove the skin at this stage to prevent the beets from bleeding during cooking.

Step 2

Place the beets in a large pot and cover with water. Bring the water to a boil, then reduce to a simmer. Cook for 35-40 minutes or until the beets are tender and a knife can be easily inserted.

Step 3

Drain the beets and allow them to cool for a few minutes. Once cool enough to handle, peel off the skins using your hands or a paper towel.

Step 4

Dice the cooked beets into small cubes and transfer them to a mixing bowl.

Step 5

In a small bowl, combine the plain yogurt, minced garlic, olive oil, lemon juice, and salt. Stir well to create a creamy dressing.

Pour the yogurt dressing over the diced beets and gently mix until the beets are evenly coated.
