Ingredients

  • 6 large eggs
  • 1 medium ripe plantain
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 1 cup black beans
  • 1 medium onion
  • 2 cloves garlic
  • 0.25 cup fresh cilantro
  • 2 tablespoons olive oil
  • 0.5 teaspoons ground cumin
  • 0.25 teaspoons red chili flakes
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Peel the ripe plantain and slice it into thin, diagonal pieces (about 1/4 inch thick).

Dice the red and green bell peppers, as well as the onion. Mince the garlic cloves.

Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat.
