Ingredients

  • 800 g Potatoes
  • 2 medium Onions
  • 340 g Corned beef
  • 3 medium Carrots
  • 500 ml Beef stock
  • 15 g Butter
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Directions

Step 1

Preheat your oven to 180°C (350°F).

Peel the potatoes and slice them into thin rounds, about 3-4mm thick. Set them aside in a bowl of cold water to prevent browning.

Peel and thinly slice the onions into rings. Peel and slice the carrots into thin rounds.

Open the tin of corned beef and cut it into small chunks or slices.

Grease a large, ovenproof casserole dish with the butter.

Layer the ingredients in the dish, starting with a layer of potatoes to cover the base. Add a layer of onions, followed by carrots and chunks of corned beef. Lightly season each layer with a sprinkle of salt and pepper.

Repeat the layers until all the ingredients are used up, finishing with a top layer of potatoes.

Pour the beef stock evenly over the top, ensuring it filters down through the layers.
