Ingredients

  • 2 pieces trout fillets (skin-on)
  • 3 tablespoons olive oil

  • 1 cup cherry tomatoes (halved)

  • 1 clove garlic (minced)
  • 2 tablespoons fresh basil (chopped)
  • 2 tablespoons flat-leaf parsley (chopped)
  • 1 tablespoon capers (drained)
  • 1 tablespoon red wine vinegar
  • 0.5 piece lemon (juiced)
  • 1 tablespoon butter

Directions

Step 1

Pat the trout fillets dry with paper towels and season both sides with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.

Step 2

Heat 2 tablespoons of olive oil in a large non-stick skillet over medium-high heat.

Step 3

Place the trout fillets skin-side down in the skillet. Press lightly with a spatula to ensure even contact with the pan and cook for 3-4 minutes, or until the skin is crispy.

Carefully flip the trout fillets and cook the flesh side for an additional 2-3 minutes, or until the fish is opaque and cooked through. Remove the fillets from the skillet and keep them warm by tenting with foil.
