Ingredients

  • 2 pieces (8 oz each) Sirloin steak
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 cloves Garlic cloves
  • 1 sprig Fresh rosemary
  • 1 sprig Fresh thyme

Directions

Step 1

Take the sirloin steaks out of the refrigerator 30 minutes before cooking to allow them to come to room temperature. Pat them dry with paper towels.

Step 2

Season both sides of the steaks generously with salt and black pepper.

Step 3

Heat a cast iron skillet or heavy-bottomed pan over medium-high heat. Add the olive oil and let it heat until shimmering.

Place the steaks into the hot pan and sear for 2-3 minutes on the first side without moving them to ensure a proper crust forms.

Flip the steaks and sear for another 2-3 minutes on the other side.
