Directions

Step 1

Pat the sea scallops dry with paper towels and season both sides with kosher salt and freshly ground black pepper. Set aside.

In a large skillet over medium heat, add 2 tablespoons of olive oil. Once the oil is hot and shimmering, add the scallops in a single layer, leaving enough space in between to prevent overcrowding.
