Ingredients

  • 12 pieces sea scallops
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 cup champagne grapes
  • 0.25 cup sliced almonds
  • 1 medium (finely minced) shallot
  • 0.25 cup dry white wine
  • 1 tablespoon lemon juice
  • 2 tablespoons (chopped) fresh parsley

Directions

Step 1

Pat the scallops dry with paper towels and season both sides with salt and black pepper.

Step 2

Heat a large skillet over medium-high heat and add 1 tablespoon of butter and the olive oil.

Step 3

Once the butter is melted and begins to foam, place the scallops in the skillet in a single layer without overcrowding. Sear for 2-3 minutes on one side until a deep golden crust forms, then flip and cook for another 1-2 minutes on the other side. Remove scallops from the skillet and set aside on a plate.
