Ingredients

  • 4 pieces (6-oz each) salmon fillets
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 medium (finely minced) shallot
  • 2 cloves (minced) garlic
  • 0.5 cup dry white wine
  • 0.75 cup heavy cream
  • 2 tablespoons (chopped) fresh tarragon
  • 1 tablespoon lemon juice

Directions

Step 1

Season the salmon fillets with salt and black pepper on both sides.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Once hot, add the salmon fillets skin-side down. Cook for 4-5 minutes or until the skin is crispy.

Step 3

Flip the salmon fillets and cook for another 3-4 minutes, or until the salmon is cooked through. Remove the salmon from the skillet and set aside, keeping warm.
