Ingredients

  • 4 fillets (6-8 oz each) Orange roughy fillets
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup All-purpose flour
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 1 cup (packed) Fresh basil leaves
  • 2 cloves Garlic cloves
  • 0.25 cup Grated Parmesan cheese
  • 0.5 cup Heavy cream
  • 0.25 cup Chicken or vegetable stock
  • 1 tablespoon Lemon juice

Directions

Step 1

Pat the orange roughy fillets dry with paper towels and season both sides with salt and black pepper.

Step 2

Lightly dredge the fillets in all-purpose flour, shaking off the excess.

Step 3

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat until the butter is melted and the pan is hot.

Add the fillets to the skillet and cook for 3-4 minutes per side, or until the fish is golden brown and flakes easily with a fork. Remove the fillets from the skillet and set aside on a plate.
