Ingredients

  • 4 pieces bone-in pork chops
  • 1.5 teaspoons salt
  • 1 teaspoons ground black pepper
  • 1 teaspoons paprika
  • 1 teaspoons garlic powder
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 4 whole garlic cloves

Directions

Step 1

Take the pork chops out of the refrigerator 30 minutes before cooking to allow them to come to room temperature.

Step 2

Pat the pork chops dry with paper towels and season both sides generously with salt, black pepper, paprika, and garlic powder. Rub the seasonings into the meat for even coating.

Step 3

Heat a large skillet over medium-high heat. Add the olive oil and let it heat until shimmering.

Step 4

Carefully place the pork chops into the skillet without overcrowding. Sear for 3-4 minutes on the first side, or until a golden-brown crust forms.

Step 5

Flip the chops and cook for another 3-4 minutes on the second side.

Step 6

Lower the heat to medium, add the butter, rosemary, thyme, and whole garlic cloves to the skillet.

Step 7

Tilt the skillet slightly and use a spoon to baste the pork chops with the melted butter and aromatics for an additional 2-3 minutes. This enhances flavor and keeps the chops moist.

Step 8

Check the internal temperature of the pork chops using a meat thermometer; it should read 145°F (63°C). If the chops need more time, continue cooking and basting until they reach the correct temperature.

Step 9

Transfer the pork chops to a plate and let them rest for 5 minutes to allow the juices to redistribute.

Step 10

Serve the pork chops warm, drizzling them with the pan juices for added flavor.
