Ingredients

  • 2 pieces Ribeye steak (1-1.5 inches thick)
  • 2 teaspoons Kosher salt
  • 1 teaspoon Freshly ground black pepper
  • 2 tablespoons Olive oil
  • 4 tablespoons Unsalted butter
  • 4 cloves Garlic cloves, crushed
  • 4 sprigs Fresh thyme sprigs
  • 2 sprigs Fresh rosemary sprigs

Directions

Step 1

Take the steaks out of the refrigerator at least 30 minutes before cooking to allow them to come to room temperature. This ensures even cooking.

Step 2

Preheat your oven to 400°F (200°C).

Step 3

Pat the steaks dry with paper towels to remove excess moisture. This will help you achieve a great sear.

Step 4

Season the steaks generously with kosher salt and freshly ground black pepper on both sides.

Step 5

Heat a large, oven-safe skillet (preferably cast iron) over medium-high heat for 2-3 minutes. Add the olive oil and heat until it shimmers.

Step 6

Carefully place the steaks in the skillet. Do not overcrowd the pan. Let the steaks sear undisturbed for 2-3 minutes on one side until they develop a golden-brown crust.

Step 7

Flip the steaks and sear the other side for an additional 2-3 minutes.

Step 8

Reduce the heat to medium and add the unsalted butter, crushed garlic cloves, thyme sprigs, and rosemary sprigs to the pan.

Step 9

Tilt the skillet slightly and use a spoon to continuously baste the steaks with the melted butter, garlic, and herbs for about 1-2 minutes. This adds incredible flavor.

Step 10

Transfer the skillet with the steaks into the preheated oven. Roast for an additional 4-6 minutes for medium-rare doneness (135°F internal temperature) or adjust the time for your preferred level of doneness.

Step 11

Carefully remove the skillet from the oven using oven mitts. Transfer the steaks to a cutting board and loosely tent them with aluminum foil. Let them rest for 5-7 minutes to retain their juices.

Step 12

Serve the steaks with a drizzle of the garlic herb butter from the skillet. Pair with your favorite side dishes like mashed potatoes or roasted vegetables for a complete meal.
