Ingredients

  • 8 pieces Lamb chops
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 cloves Fresh garlic, minced
  • 2 tablespoons Fresh mint leaves, chopped
  • 2 tablespoons Lemon juice
  • 1 teaspoon Honey
  • 6 cups Mixed salad greens
  • 1 cup Cherry tomatoes, halved
  • 0.5 cup Cucumber, sliced

Directions

Step 1

Season the lamb chops on both sides with 1 teaspoon of salt and the black pepper. Let them sit at room temperature for 10 minutes while preparing other ingredients.

Step 2

Heat a large skillet over medium-high heat. Add 1 tablespoon of olive oil to the skillet.

Step 3

Place the lamb chops in the hot skillet, making sure not to overcrowd the pan. Sear for 3-4 minutes per side until golden brown and cooked to your desired doneness (125°F for medium-rare or 135°F for medium). Remove the chops from the pan, place them on a plate, and tent with foil to keep warm.
