  • 2 pieces Fresh rosemary sprigs
  • 2 pieces Fresh thyme sprigs

Directions

Step 1

Remove the filet mignon from the refrigerator 30 minutes before cooking to allow it to come to room temperature. This ensures even cooking.

Step 2

Pat the steaks dry with paper towels and season both sides generously with kosher salt and freshly ground black pepper.

Step 3

Heat a cast-iron skillet over medium-high heat until very hot but not smoking.

Add olive oil to the skillet and swirl to coat the bottom.
