Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 medium, finely chopped shallot
  • 1 cup chicken broth
  • 2 tablespoons whole-grain mustard
  • 1 quarter cup heavy cream
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Season both sides of the chicken breasts with salt and black pepper.

Step 2

Heat a large skillet over medium-high heat and add olive oil.

Once the oil is hot, carefully place the chicken breasts in the skillet and cook for 5-7 minutes on each side until golden brown and fully cooked (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside on a plate, covering with foil to keep warm.
