Ingredients

  • 1 small, finely diced Shallot
  • 2 cloves, minced Garlic
  • 1.5 cups Fresh blueberries
  • 2 tablespoons Honey
  • 1 tablespoon Balsamic vinegar
  • 0.5 cup Low-sodium chicken broth
  • 0.5 teaspoon Thyme
  • 1 teaspoon Cornstarch
  • 2 tablespoons Water

Directions

Step 1

Pat the chicken breasts dry with paper towels. Season both sides with salt, black pepper, and paprika.

Heat a large skillet over medium-high heat and add the olive oil. Once the oil is hot, place the chicken breasts in the skillet and cook for 5-7 minutes on each side, or until golden brown and cooked through.
