Ingredients

  • 2 pieces (about 6-8 oz each) beef steaks (such as sirloin or ribeye)
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 piece (small) shallot, finely minced
  • 1 cup heavy cream
  • 2 teaspoons wasabi paste
  • 1 tablespoon soy sauce
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Remove the beef steaks from the refrigerator 30 minutes before cooking to allow them to come to room temperature.

Step 2

Season both sides of the steaks evenly with kosher salt and black pepper.

Step 3

Heat a large skillet over medium-high heat and add 2 tablespoons of olive oil.

Step 4

Once the oil is shimmering, place the steaks in the skillet. Sear for 3-4 minutes on each side, depending on your preferred doneness (3 minutes for medium-rare, 4 minutes for medium).

Step 5

Add 1 tablespoon of butter to the skillet and spoon the melted butter over the steaks for an additional minute to baste them.

Step 6

Remove the steaks from the skillet, cover loosely with foil, and let them rest for 5-7 minutes.

Step 7

In the same skillet, reduce the heat to medium and add the minced shallot. Sauté for 1-2 minutes until softened.

Step 8

Pour the heavy cream into the skillet and stir, scraping up any browned bits from the bottom of the pan.

Step 9

Add the wasabi paste and soy sauce, whisking until fully combined. Let the sauce simmer gently for 2-3 minutes until slightly thickened.

Step 10

Taste the sauce and adjust the seasoning, adding more wasabi paste or soy sauce if desired.

Step 11

Slice the rested steaks against the grain for serving.

Step 12

Plate the steak slices and drizzle the wasabi sauce over the top. Garnish with chopped parsley if desired.

Step 13

Serve immediately with your choice of sides, such as roasted vegetables or steamed rice.
