Ingredients

  • 1 pound baby potatoes
  • 0.75 pound green beans
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 3 units garlic cloves, minced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 2 tablespoons fresh parsley, chopped
  • 0.25 cup water

Directions

Step 1

Wash the baby potatoes and cut them into halves (or quarters if they are larger). Trim the ends off the green beans and rinse them thoroughly.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the potatoes, cut side down, and cook for about 5 minutes until they start to develop a golden-brown crust.

Step 3

Lower the heat to medium-low and add 1/4 cup of water to the skillet. Cover with a lid and let the potatoes steam for 8-10 minutes, or until tender when pierced with a fork.

Step 4

While the potatoes cook, blanch the green beans: bring a small pot of water to a boil, add the green beans, and cook for 2 minutes. Drain and immediately plunge them into a bowl of ice water to stop the cooking. Drain again and set aside.

Step 5

Once the potatoes are tender and water has evaporated, push them to one side of the skillet. Add the remaining 1 tablespoon of olive oil and 1 tablespoon of butter to the empty side of the skillet.

Step 6

Add the minced garlic to the butter and oil, stirring for 30 seconds until fragrant. Then, add the blanched green beans to the skillet.

Step 7

Season the potatoes and green beans with salt, black pepper, and paprika. Toss everything together gently and cook for an additional 5 minutes, allowing the green beans to warm through and the flavors to meld.

Step 8

Remove from heat and sprinkle the dish with fresh chopped parsley before serving. Serve immediately and enjoy!
