Ingredients

  • 4 pieces (6 oz each) Rockfish fillets
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup All-purpose flour
  • 2 tablespoons Olive oil
  • 3 tablespoons Unsalted butter
  • 2 pieces Garlic cloves, minced
  • 2 tablespoons Capers, drained and rinsed
  • 0.25 cup White wine
  • 2 tablespoons Fresh lemon juice
  • 2 tablespoons Fresh parsley, chopped
  • 4 pieces Lemon wedges

Directions

Step 1

Season the rockfish fillets on both sides with salt and black pepper.

Step 2

Lightly dredge the fish fillets in all-purpose flour, shaking off any excess.

Step 3

Heat the olive oil in a large non-stick skillet over medium-high heat.

Step 4

Place the fillets in the skillet and cook for 3-4 minutes per side, or until golden brown and fully cooked through. Remove the fillets from the skillet and set aside on a plate.

Step 5

Reduce the heat to medium and add the butter to the skillet. Once melted, add the minced garlic and sauté for 1-2 minutes until fragrant.

Step 6

Stir in the capers, white wine, and lemon juice, scraping up any browned bits from the bottom of the skillet. Simmer the sauce for 2-3 minutes to let it reduce slightly.

Step 7

Return the cooked rockfish fillets to the skillet, spooning the sauce over the top to reheat and coat the fish.

Step 8

Sprinkle the dish with fresh parsley and serve warm with lemon wedges on the side.
