Directions

Step 1

Pat the Chilean sea bass fillets dry with paper towels to ensure a good sear. Lightly season both sides of the fillets with sea salt and freshly ground black pepper.

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering.
