Ingredients

  • 2 pieces ribeye or sirloin steak
  • 2 medium yellow onion
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 sprigs fresh rosemary sprigs
  • 3 cloves garlic cloves
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon balsamic vinegar (optional)

Directions

Step 1

Take the steaks out of the refrigerator 30 minutes before cooking to bring them to room temperature. Pat them dry with a paper towel and season both sides generously with salt and black pepper.

Step 2

Peel and slice the onions into half-inch thick rings. Set aside.

Step 3

Heat a large skillet over medium-high heat and add the olive oil. Once shimmering, place the steaks in the skillet and sear for 3-4 minutes on each side for medium-rare, or until the steak reaches your desired doneness.

During the last minute of cooking, lower the heat to medium, add the butter, rosemary sprigs, and crushed garlic cloves to the pan. Spoon the melted butter over the steaks to baste them for additional flavor.
