Ingredients

  • 4 links chorizo sausage
  • 2 medium yellow onion
  • 4 large garlic cloves
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Slice the chorizo links into 1/2-inch thick rounds and set aside.

Step 2

Peel and thinly slice the yellow onions into half-moons.

Step 3

Peel and mince the garlic cloves.

Step 4

Heat a large skillet over medium heat and add 1 tablespoon of olive oil.

Step 5

Once the oil is hot, add the sliced chorizo in a single layer, and cook for 3-4 minutes on each side until golden and slightly crispy. Remove the chorizo from the skillet and set it aside on a plate.

Step 6

In the same skillet, add the remaining 1 tablespoon of olive oil and sauté the sliced onions over medium heat. Stir occasionally and cook for 8-10 minutes until they are soft and caramelized.

Step 7

Add the minced garlic to the onions and cook for another 1-2 minutes, stirring frequently, until fragrant.

Step 8

Return the cooked chorizo to the skillet and stir everything together. Season with salt and black pepper to taste.

Step 9

Cook for an additional 3 minutes to allow the flavors to meld.

Step 10

Remove from heat and garnish with chopped fresh parsley before serving.

Step 11

Serve warm as an appetizer with crusty bread or as a main dish with a side of rice or potatoes.
