  • 4 pieces Bone-in, skin-on chicken thighs
  • 3 tablespoons Olive oil

  • 1 teaspoon Dried thyme
  • 1 pound Baby potatoes, halved
  • 3 pieces Carrots, peeled and cut into chunks
  • 1 pound Brussels sprouts, halved
  • 3 pieces Garlic cloves, minced
  • 0.5 cup Chicken broth
  • 2 tablespoons Lemon juice
  • 2 tablespoons Fresh parsley, chopped (optional for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Pat the chicken thighs dry with paper towels and season both sides with 1 teaspoon salt, 0.5 teaspoon black pepper, paprika, garlic powder, and dried thyme.

Heat 2 tablespoons of olive oil in a large oven-safe skillet or cast-iron pan over medium-high heat.
