Ingredients

  • 2 medium Turnips
  • 2 medium Potatoes
  • 3 tablespoons Olive oil
  • 1 tablespoon Unsalted butter
  • 2 cloves Garlic
  • 1 teaspoon Paprika
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Peel the turnips and potatoes, and cut them into evenly-sized cubes, roughly 1/2 inch in size.

Step 2

Finely mince the garlic cloves and chop the fresh parsley, then set both aside.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 4

Add the cubed turnips and potatoes to the skillet, spreading them out in a single layer for even cooking.

Step 5

Cook for 8-10 minutes, stirring occasionally, until the vegetables start to turn golden brown.

Step 6

Reduce the heat to medium-low and push the vegetables to one side of the skillet. Add the remaining tablespoon of olive oil and the butter to the empty side of the skillet.

Step 7

Once the butter has melted, add the minced garlic, paprika, dried thyme, salt, and black pepper. Stir the aromatics into the oil and butter, then blend them with the vegetables.

Step 8

Continue cooking for another 10-12 minutes, stirring occasionally, until the turnips and potatoes are tender and crispy.

Step 9

Turn off the heat and sprinkle the chopped parsley over the top. Toss to combine.

Step 10

Serve the pan-fried turnips and potatoes warm as a side dish to your favorite main course.
