  • 2 pieces (approximately 8 oz each) beef sirloin steaks
  • 2 tablespoons unsalted butter

  • 60 ml (1/4 cup) Irish whiskey
  • 120 ml (1/2 cup) heavy cream
  • 60 ml (1/4 cup) beef stock
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon (to taste) salt
  • 0.5 teaspoon (to taste) black pepper

Directions

Step 1

Remove the steaks from the fridge and let them sit at room temperature for about 20 minutes before cooking to ensure even cooking.

Step 2

Season both sides of the steaks generously with salt and black pepper.

Step 3

Heat a large skillet over medium-high heat and add the olive oil and 1 tablespoon of butter.

Once the butter has melted and starts to sizzle, add the steaks to the skillet. Sear for 3-4 minutes on each side for medium-rare, or longer if you prefer your steak more cooked.
