Ingredients

  • 2 large pieces Cucumber
  • 3 cloves Garlic cloves
  • 2 tablespoons Soy sauce
  • 1 tablespoon Sesame oil
  • 1 tablespoon Vegetable oil
  • 0.5 teaspoon Red pepper flakes (optional)
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper, freshly ground
  • 1 teaspoon Sesame seeds (optional, for garnish)

Directions

Step 1

Wash the cucumbers thoroughly and pat them dry. Slice them in half lengthwise, then cut them into 1/4-inch thick half-moon shapes.

Step 2

Peel and finely mince the garlic cloves. Set aside.

Step 3

Heat the vegetable oil in a large frying pan or skillet over medium-high heat.

Step 4

Once the oil is hot, add the minced garlic and sauté for 30 seconds until fragrant, being careful not to burn it.

Step 5

Add the sliced cucumbers to the pan. Stir-fry for 2-3 minutes, allowing them to soften slightly and gain a bit of color while still retaining some crunch.

Step 6

Reduce the heat to medium and add the soy sauce, sesame oil, salt, black pepper, and red pepper flakes (if using). Toss the cucumbers to evenly coat them in the sauce.

Step 7

Cook for another minute, stirring frequently, until the cucumbers are evenly warmed and coated but not overcooked.

Step 8

Remove the cucumbers from the heat and transfer them to a serving dish.

Step 9

Sprinkle sesame seeds on top for garnish if desired, and serve hot as a side dish or appetizer.
