Ingredients

  • 500 g All-purpose flour
  • 7 g Active dry yeast
  • 50 g Granulated sugar
  • 250 ml Milk
  • 50 g Unsalted butter
  • 1 tsp Salt
  • 2 large Eggs
  • 300 g Sliced ham
  • 75 g Green olives (pitted)
  • 75 g Raisins
  • 1 large Egg yolk (for egg wash)
  • 1 tbsp Water (for egg wash)

Directions

Step 1

Warm the milk to about 40°C (105°F) and dissolve the sugar in it. Sprinkle the yeast over the milk mixture and let it sit for 5-10 minutes until it becomes frothy.

Step 2

In a large mixing bowl, combine the flour and salt. Add the yeast mixture, one egg, and softened butter to the bowl.

Step 3

Knead the dough for about 8-10 minutes by hand or 5 minutes using a stand mixer with a dough hook, until the dough is smooth and elastic.

Place the dough in a greased bowl, cover it with a damp towel or plastic wrap, and let it rise for about 1-1.5 hours or until it doubles in size.

Punch the dough down and roll it out on a floured surface into a rectangle about 1 cm (0.4 inches) thick.

Spread the sliced ham evenly over the dough, leaving a 1-inch border along the edges. Sprinkle the raisins and green olives evenly over the ham.

Starting from the long edge, tightly roll the dough into a log. Pinch the seam and the ends to seal everything inside.

Place the rolled dough on a greased or parchment-lined baking sheet, seam-side down. Cover loosely and let it proof for 30 minutes.

Preheat the oven to 180°C (350°F). In a small bowl, combine the egg yolk and water to make an egg wash. Brush the top and sides of the bread with the egg wash.

Bake the bread in the preheated oven for 25-30 minutes, or until the top is golden brown and the bread sounds hollow when tapped on the bottom.

Remove the bread from the oven and allow it to cool slightly before slicing and serving.
