Ingredients

  • 2 pieces (8-10 oz each) ribeye steak
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper, freshly ground
  • 2 tablespoons vegetable oil
  • 2 tablespoons unsalted butter
  • 2 tablespoons shallots, finely diced
  • 2 cloves garlic, minced
  • 0.25 cup whiskey
  • 0.5 cup beef stock
  • 0.25 cup heavy cream

Directions

Step 1

Remove the steaks from the refrigerator 30 minutes before cooking to allow them to come to room temperature. Pat them dry with paper towels.

Step 2

Generously season both sides of the steaks with salt and freshly ground black pepper.

Step 3

Heat a large cast-iron skillet or heavy-bottomed pan over medium-high heat. Add the vegetable oil and heat until shimmering.

Carefully place the steaks in the hot pan. Sear the steaks for 3-4 minutes on each side, or until a deep golden-brown crust forms. For medium-rare, cook until an internal temperature of 130°F is reached. Adjust cooking time as needed for your preferred doneness.

Transfer the steaks to a plate and tent loosely with aluminum foil to rest while you make the sauce.
