Ingredients

  • 12 oz Rotini pasta
  • 1.5 cups Cherry tomatoes, halved
  • 1 medium Yellow bell pepper, diced
  • 1 medium Red bell pepper, diced
  • 1 medium Cucumber, diced
  • 0.5 small Red onion, finely chopped
  • 0.5 cup Black olives, sliced
  • 1 cup Shredded cheddar cheese
  • 2 tbsp Fresh parsley, chopped
  • 1 cup Italian salad dressing
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the rotini pasta according to the package instructions until al dente, about 8 minutes. Drain and rinse under cold water to cool the pasta down quickly.

Step 2

In a large mixing bowl, combine the halved cherry tomatoes, diced yellow and red bell peppers, diced cucumber, chopped red onion, and sliced black olives.

Add the cooked and cooled pasta to the vegetable mixture and toss to combine.
